Chicago Deep Dish Pizza, an iconic dish in American culinary culture, emerged in the mid-20th century from Pizzeria Uno in Chicago. Crafted by Ike Sewell and Ric Riccardo, this pizza style features a thick, buttery crust filled with layers of cheese, robust tomato sauce, and an array of toppings. Its unique construction and hearty flavors have made it a beloved symbol of Chicago’s culinary heritage, cherished by locals and visitors alike.


  • For the crust:
  • 1 and 1/2 cups (190g) all-purpose flour

  • 1/4 cup (30g) cornmeal

  • 1/2 teaspoon salt

  • 1 teaspoon sugar

  • 1/2 cup (120ml) warm water

  • 2 tablespoons olive oil

  • 1/2 packet (about 1 and 1/8 teaspoons) active dry yeast

  • For the filling:
  • 1 cup (225g) shredded mozzarella cheese

  • 1/2 cup (115g) sliced pepperoni or any other toppings of your choice (e.g., sausage, bell peppers, onions)

  • 1 cup (240ml) pizza sauce (store-bought or homemade)

  • Grated Parmesan cheese, for topping


  • Prepare the crust:
  • In a large mixing bowl, combine the all-purpose flour, cornmeal, salt, and sugar.
  • In a separate small bowl, dissolve the yeast in warm water and let it sit for 5-10 minutes until frothy.
  • Pour the yeast mixture and olive oil into the dry ingredients. Mix until a dough forms.
  • Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. Shape the dough into a ball and place it in a greased bowl. Cover with a clean kitchen towel and let it rise in a warm place for about 1 hour, or until doubled in size.
  • Preheat the oven:
  • Preheat your oven to 425°F (220°C). Lightly grease a 9-inch (23cm) round cake pan or deep dish pizza pan.
  • Assemble the pizza:
  • Once the dough has risen, punch it down and press it into the prepared cake pan, spreading it evenly across the bottom and up the sides.
  • Layer half of the shredded mozzarella cheese over the dough, followed by the pepperoni slices or other toppings of your choice.
  • Pour the pizza sauce evenly over the toppings, spreading it out with the back of a spoon.
  • Sprinkle the remaining shredded mozzarella cheese over the sauce. Optionally, sprinkle grated Parmesan cheese on top.
  • Bake the pizza:
  • Place the pizza in the preheated oven and bake for 20-25 minutes, or until the crust is golden brown and the cheese is bubbly and melted.
  • Serve:
  • Once baked, remove the pizza from the oven and let it cool in the pan for a few minutes before slicing and serving.
